Culinary Director

Recognized internationally as one of Lima’s top chefs, Coque Ossio has shown great talent not only in the art of gastronomy but as a culinary entrepreneur. After graduating in Lima from the University of the Pacific where he studied Business Administration, Coque enrumbó to the prestigious Culinary Institute of America in New York and earned the Degree in Culinary Arts. Before returning to Peru, he did an internship with chef Alain Passard in Paris at the restaurant Arpège that has three Michelin stars. Currently, Ossio is the owner and corporate chef of the best restaurants in Cusco (Inka Grill, MAP Café, Pachapapa, Incanto, Greens Organic and LIMO Peruvian cuisine & pisco bar) as well as La Bonbonnière in Lima. He is also general manager of Jorge Luis Ossio Gastronomic Consulting where he provides consulting services to various restaurant chains in Peru such as Bembos Burger Grill, China Wok and Casa Andina and in the United States to Andina Restaurant and Philips Food in Portland and Baltimore respectively. Coque has combined his work in restaurants with the management of the gastronomic program ‘Con Sabor a Perú’, which is broadcast throughout South America from the El Gourmet channel.
